1 Introduction
What is the first thing foreigners will do when they are ready to order in a Chinese
restaurant? Obviously, they need a menu, including both Chinese menu and English menu, for
not all foreigners can understand Chinese. An exquisite dish name on the menu, the first
impression given to a foreigner, just likes a person addresses perfectly. It is an important
means of conveying accurate information to the customers. However, a large number of
tourists from foreign countries are not satisfied with the English translations of Chinese dish
names which confuse and even startle them very much, saying that the awful English
translations of some Chinese dish names does not make any sense at all and leaves them a bad
impression on Chinese diet culture. Therefore, if the English translation is not appropriate, it
will influence not only the spread of Chinese diet culture but also the tourists ’ appetite. As a
result, a set of fixed English translation for Chinese menus has been published by the Beijing
Municipal Tourism Bureau so as to unify and standardize the English translation of Chinese
dish names. Feng Dongming, head of the translation program and vice dean of the Tourism
School of Beijing Union University, once said that Chinese culture was often reflected in
Chinese dish names. So we should translate them correctly so as not to make foreigners
misunderstood.
Many Chinese experts have done much research in the English translation of Chinese
dish names. Chen Jiaji puts forward that translation tactics such as literal translation, free
translation, transliteration can be used in the translation of Chinese dish names under various
