不同种水果皮制作环保酵素的比较研究

摘要:环保酵素是将红糖或少量发酵菌、水果残渣（水果皮及少量果肉）与水按一定比例混合，经过厌氧发酵后的棕色液体，有浓郁的果香味，具有抗氧化、去污渍、去油脂、净化污水等功效。在生活中，环保酵素制作材料随处可寻，制作过程简单，既有广泛的用途，又可大大减少生活垃圾，节约资源，对环境保护可起到重要的作用。

本论文主要选取了柠檬皮、葡萄皮、香蕉皮、苹果皮、香瓜皮五种水果皮，红糖做发酵剂，用对比实验的方法来确定不同种水果皮制作环保酵素的效果如何？哪些水果皮更适合于做环保酵素？

根据查阅中国知网等一些权威文献，网络上只有很少一部分有关水果肉制作食用酵素的内容，但用水果皮制作环保酵素的文献，可参考的资料极少。因此进行采用不同种水果皮制作环保酵素及其效果的比较研究试验有其必要的意义。
