※分析检测 食品科学 2009, Vol. 30, No. 14 253 蜂蜜中葡萄糖、果糖和蔗糖NMR 定量分析研究 1 2 , 2 2 阎政礼 ,杨明生 * ,李添宝 ,冯志明 ( 1.湖南师范大学医学院,湖南长沙 4 10006 ;2 .湖南师范大学化学化工学院,湖南长沙 4 100 8 1) 摘 要:采用核磁共振波谱分析技术,确定了蜂蜜中葡萄糖、果糖和蔗糖在重水中的各种构型,归属了蜂蜜中葡 萄糖、果糖和蔗糖的质子核磁共振谱的主要特征峰,以邻苯二甲酸氢钾作内标,同时对蜂蜜中上述三种主要糖进 行了定量分析。葡萄糖、果糖和蔗糖测定结果的相对标准偏差分别为0 .3 3 % 、0 . 17 % 、1.34 % ,回收率分别为 9 6 .6 8 % 、9 8 .0 3 % 、9 5 .5 6 % 。该法取样量少,直接定量,所得结果重现性好、准确度高,为蜂蜜的质量标准研 究提供一种简单可行的方法。 关键词:核磁共振;蜂蜜;葡萄糖;果糖;蔗糖;测定 Quantitative Analysis of Glucose, Fructose and Sucrose in Honey by Nuclear Magnetic Resonance Spectroscopy 1 2, 2 2 YAN Zheng-li ,YANG Ming-sheng * ,LI Tian-bao ,FENG Zhi-ming (1. College of Chemistry and Chemical Engineering, Hunan Normal University, Changsha 4 10081, China) Abstract :Various configurations of glucose, fructose and sucrose in honey were determined by nuclear magnetic resonance (NMR) spectroscopy when dissolved in heavy water, their main characteristic peaks in the 1H-NMR spectrum were attributed, and their contents was measured with potussium biphthalate as an internal standard. The RSDs of determination of glucose, fructose and sucrose were 0.33%, 0.17% and 1.34%, respectively, and mean recoveries for them in spiked honey were 96.68%, 98.03% and 95.56%, respectively. This method can be applied to direct determination of small-amount samples with stable and repeatable results and high precision for study of quality standards of honey. Key words :nu clear magn
