X X 大 学 毕 业 论 文(设计) 题 目:年产14.6万吨啤酒工厂的初步设计 学 号: 姓 名: 年 级:2005 级 学 院:材料与化工学院 系 别:生 工 系 专 业:生 物 工 程 指导教师: 完成日期:2009年5月24 日 摘 要 本设计为顺应近几年来啤酒工业的飞速发展的需求,在啤酒工艺成熟的基础上,同时体现了啤酒酿造的一些新工艺,为企业的开源节流提供了新的依据。 设计题为14.6万吨啤酒工厂初步设计,此设计酿造的啤酒品种为12度普通淡色啤酒,啤酒包装包括瓶装、听装;糖化采用二次煮出糖化法,有利于提高原料的利用率;采用外加热式进行煮沸、糊化,有效地利用热能;包装线采用进口联合全自动化系统,本设计重点工段发酵工段采用一罐下面发酵法,同时采用自动控制系统,酵母采用APK啤酒酵母,有效地缩短发酵周期,减少投资费用。最后通过对啤酒厂的废水来源做了简要的分析,并给出了废水的处理方案,证明了设计的合理性 在考虑工艺流程的同时,通过对整个啤酒厂技术经济分析,证明了设计的合理性和可行性。 关键词:啤酒工艺;设备选型;技术经济;发酵;废水处理 Abstract This design for years with the rapid development of industry of beer in beer process requirements, on the basis of mature, at the same time embodies the beer brewing some new technology, for enterprises expenditure provided new evidence.
