牛肉、黄油、土豆、花椒、 八角炸香、 十三香、 老抽、 大蒜 、盐、糖、清水、 洋葱、姜
;Cut potatoes into pieces, and
make beef become diced meat
土豆切块,牛肉切粒
; Put some pepper ash and Anise Fried incense, add ginger then fry beef
先把一些花椒和八角炸香,放入姜然后炒牛肉 ;Stir-fry beef into 13 incense and old smoke soy sauce. Such not only can make it chromatically,but also more let beef become well flavoured
炒牛肉时放入十三香和老抽.这样不但可以上色.会更加让牛肉入味 ;;Then add mild water or boiled water and cover pot to braised the beef ( you must not put cold water when doing beef, itll make meat harden)
然后用温水或者开水盖锅闷(做牛肉时千万不要放冷水,这样会让肉变硬;Stewing until almost out of water, and you add some onion segment on plate then it would be OK.
焖到快没水时,加入少许葱段即可上盘了
