四川主栽茶树品种的多酚氧化酶活性

[摘 要]为了实现控制PPO酶,提高四川红、绿茶加工品质,对四川主要产荼区具代表性的5个茶树
栽培品种鲜叶的多酚氧化酶(PPO)进行粗提,测定并比较不同品种的酶活特性。结果表明,当底物邻苯二酚
的量为0.3~1.2mI。时,各个品种的酶活力随浓度增加而升高,而超过1.2mL时,酶活力下降;在25~45℃
种的酶活力丧失程度不同;各品种的酶活力的适宜pH相对偏碱;相同浓度的3种抑制剂对各品种的酶活力
均有一定的抑制效果。
