Abstract:T e polyp enol oxidase (PPO)from pulp in Yali pear(P y rus br etschn eid er i Re d.)
w as extracted and purified, and its activity w as studied.Effects of t e factors suc as pH val-
ue, temperature, t ermostability, in ibitor, different mature periods and different parts of
pulp etc.on PPO activity w ere investigated wit t e pulp in Yali pear as materials.By using
catec ol as t e substrate, t e PPO activity w as identified using t e product of enzymatic reac-
tion.T e crude preparation of t e PPO w as purified from pulp of Yali pear by successive steps
of ammonium sulfate fractionation wit saturation 30%, ammonium sulfate fractionation w it
