摘 要
传统乳制品是乳酸菌的传统乳制品以采自35份传统乳制品样品(19份酸牛奶,7份奶油,2份奶酪,7份鲜牛奶)为研究对象,运用纯培养技术和16S rRNA基因序列分析方法对样品中乳酸菌进行分离鉴定。结果显示:从35份样品中共分离获得属于12个种和亚种的124株乳酸菌,即Lac. lactis subsp. lactis(48株,占分离株38.71%)、L. plantarum(32株,占25.81%)、Leu. mesenteroides(22株,占17.74%)、L. paracasei(6株,占4.84%)、L. helveticus(5株,占4.03%)、L. rhamnosus(3株,占2.42%)和L. brevis、L. diolivorans各2株(分别占1.61%),且Leu. pseudomesenteroide、E. durans、E. sulfurous、L. buchneri各1株(分别占0.81%)。其中以Lac. lactis subsp. lactis和L. plantarum为样品中优势菌群,其次Leu. mesenteroides和L. paracasei的分离数量较多。

Isolation and identification of Latic acid bacteria from traditional dairy products in Wulate Zhongqi
Abstract
Traditional dairy products were the natural habitats of lactic acid bacteria. In order to reveal and research the population structure of lactic acid bacteria, and preserve lactic acid bacteria from traditional dairy products in arid and desert areas. Lactic acid bacteria were isolated and identified using pure culture method and 16S rRNA gene sequencing from sixty nine samples of traditional dairy products, including yogurt, cream, cheese and milk, which were collected from pastoral of Wulate Zhongqi areas of Inner Mongolia.The results showed as follows: 124 isolates from 35 samples of Wulate Zhongqi of Inner Mongolia were identified into 12 species or subspecies, including Lac. lactis subsp. lactis (48 strains, account for 38.71% of the total isolate), L. plantarum (32 strains, account for 25.81%), Leu. mesenteroides (22 strains, account for 17.74%), L. paracasei (6 strains, account for 4.84%), L. helveticus (5 strains, account for 4.03%), L. rhamnosus (3 strains, account for 2.42%) and L. brevis, L. diolivorans (2 strains, account for 1.61% respectively) and Leu. pseudomesenteroide、E. durans、E. sulfurous、L. buchneri (1 strains, account for 0.81% respectively).
