This study aims to extract α-amylase inhibitors from white kidney beans and study their properties. First, gel chromatography was used to purify α-amylase inhibitors from white kidney bean extracts. Then, the properties of purified α-amylase inhibitors were analyzed by enzyme activity assay, SDSand mass spectrometry. The results showed that the purified α-amylase inhibitors have high inhibitory enzyme activity for starch decomposition. SDSand mass spectrometry analysis showed that the substance has high purity and molecular weight.
