毕业设计(论文) 题 目: 基于HACCP的牛奶生产 质量控制体系设计 学 院: 专业班级: 指导教师: 职称: 学生姓名: 学 号: 摘 要 牛奶的质量安全是当前社会关注的焦点。推行HACCP质量控制体系,全面提升牛奶的质量安全成为牛奶企业的首要选择。我国目前还没有建立起一套以HACCP方法和理论为基础、符合中国实际且比较完整的牛奶安全质量控制体系。 本文基于HACCP的基本原理和方法,对牛奶企业从农场原料乳控制、加工过程一只到消费终端整个流程进行了比较周密、详细的分析,初步建立起了牛奶安全质量控制体系。在对原料奶、包装材料和灌装环境控制的基础上进一步确定了系统生产的四个关键控制点,分别是原奶中抗生素的筛析、原料奶的巴氏杀菌、料液的UHT杀菌和包装材料的杀菌,初步建立起了HACCP安全质量控制体系,可以有效的监控牛奶生的整个过程,有效的控制牛奶生产的质量安全。最后,本文提出通过HACCP体系的全面监控措施,可以有效地改善牛奶的安全质量。 :HACCP,牛奶,安全,质量控制体系 ABSTRACT safety quality of milk is currently the focus of the whole society. The implementation of the HACCP quality control system and all-round improvement of quality safety has become the first choice of milk enterprise. At present,our country has not yet built up a relatively complete set of safety quality control system,which is suited to the practical situation of China on the basis of HACCP principles and methodology. This article is based on the HACCP principles and methodology, through the thorough observation and experimental study to the entire process of milk enterprises from the control of raw milk produce in the cattle farm the manufacturing process still the end consumers,set up a preliminary safety quality control system of milk On the basis of the effective control to raw milk,packing material and bottling condition,four critical control points in systematic production have been further confirmed, I.E. filtration and analysis of antibiotics in raw milk pasteurization of raw milk, UHT sterilization of mix, primarily establishing HACCP safety quality control system,which can effectively monitor the entire process of milk production and control the safety quality of milk production. Finally, this paper put forward the comprehensive control measures through the HACCP system, which can effectively improve the safety quality of milk.
