存储期间烤烟烟叶香味物质含量变化分析

摘要[目的]确定不同存储時间对烤烟上、中部烟叶香味物质含量的影响。[方法]以烤烟品种NC89为试验材料，对皖南地区自然存储3个月、6个月、9个月的烟叶进行香味物质含量的检测。[结果]在存储过程中，烤烟烟叶中新植二烯含量最高，且随存储时间延长含量不断下降。在上部烟叶中，醛类、酮类、酚类、酯类香味物质含量随存储时间延长先上升后下降，醇类物质含量先下降后上升。在中部烟叶中，随存储时间延长醛类和酯类香味物质含量均值先上升后下降，醇类和酚类物质随存储时间延长含量不断下降，而酮类物质含量则是先下降后上升。[结论]存储烟叶中上部和中部烟叶香味物质含量具有明显差异。

烟草及其制品的品质主要是由其内在化学成分的组成和含量决定，其化学成分的变化十分复杂[1]。烟草香味物质是影响烤烟烟叶质量最直接的化学成分，也是评定其品质的重要指标[2-6]。香味物质种类繁多，各成分含量差异较大，不同部位的烟叶也具有不同的外观特征、物理性状和内在质量，对烟叶香味和品质的贡献各不相同。

初烤烟叶随着存储时间延长，烟叶品质会发生变化，这主要是因为烟叶在存储放置过程中进行了自然陈化。陈化可促进烟
