蛋白质组学技术在水果品质控制方面的应用进展
摘要:蛋白质组学旨在阐明基因组所表达的真正执行生命活动的全部蛋白质的表达规律和生物功能。其对生命现象的诠释直接、准确,已逐渐成为现代生物技术发展的支撑技术。近年来,蛋白质组学在食品科学方面的应用逐渐涉及各个方面,包括果实保鲜研究、食品功能研究、食品营养分析、食品品质评价、安全检测及真伪鉴别等。这为与食品科学相关的研究提供新思路和新技术。本文概述了蛋白质组学的概念及相关主要研究技术,分析了蛋白质组学在食品科学研究中的应用,尤其水果品质控制方面,并对其在食品加工检测方向的发展前景进行了展望。

The application progress of proteomics technology in fruit quality control
Abstract: Proteomics seeks to clarify the genome expression really perform life activities protein expression pattern and biological functions. Direct interpretation of the phenomenon of life, accurate, and has gradually become the support of the development of modern biotechnology techniques. In recent years, the application of proteomics in food science gradually involve all aspects, including fresh fruit research, functional food, food nutrition analysis, evaluation of food quality, safety testing, and the authenticity of identification. This is to provide new ideas and new technology research and Food Science. This article provides an overview of the concept of proteomics and related research, analysis and application of proteomics in food science, especially fruit quality control aspects and prospects of its development in the direction of food processing detection prospect.

前言
1994年澳大利亚科学家Marc Wilkins提出蛋白质组概念,并在1995年7月在《Electrophoresis》生命科学领域从那开始取得了许多突破性的进展。特别是2003年人类基因组计划完成,功能基因组时代到来,蛋白质组学的研究被提升到新的高度[1]。全基因组测序工程为世界各物种基因组学的研究奠定了重要的信息基础,也为蛋白质组学的研究提供分析基础。植物基因组尤其是水果类基因组相对庞大,测序工作进展缓慢。目前,已测序完成的水果物种有:番木瓜 Carica papaya (Papaya),西瓜 Citrullus lanatus (Thunb.) (Watermelon),甜橙 Citrus sinensis (Sweet orange),甜瓜 Cucumis melo (Melon),黄瓜 Cucumis sativus (Cucumber),草莓 Woodland strawberry (Fragaria vesca),苹果 Malus × domestica (Domesticated apple),木薯 Manihot esculenta (Cassava),香蕉 Musa acuminata (Banana),桃 Prunus persica (Peach),番茄 Solanum lycopersicum (Tomato),葡萄Vitis vinifera (Wine Grape)。
