青岛市蔬菜重金属污染及铅、镉健康风险评价

摘 要:蔬菜是人们食用最多的食物之一,蔬菜的质量安全与否直接关系城市居民的身体健康。为评价
蔬菜重金属污染状况和蔬菜安全水平,对青岛市的2 个重要蔬菜批发市场的24 种常见蔬菜分季节进行
抽样检测,采用国家食品卫生标准限值计算单项污染指数和综合污染指数评价蔬菜Cd、Pb 、Cr、Cu、Zn
污染状况,并对青岛市民因摄入含Pb 、Cd 蔬菜的健康风险进行了分析。结果表明:青岛市冬季蔬菜重金
属污染情况较春季蔬菜严重,且以Pb 、Cd 污染为主;葱蒜类Pb 、Cd 含量均为最高,且大蒜受到中度污染;
健康风险评价表明,青岛市蔬菜中的Pb 、Cd 含量未对市民的健康产生显著的风险。

Abstract: Vegetableisoneofthelargestfoodsconsumed,andtheirqualitydirectlyrelatestothephysical
healthofurbanresidents.Inordertoevaluatetheheavymetalcontaminationandthesafelevelsofvegetables,
24 kindsofvegetablesfromtwoimportantvegetableswholesalemarketsofQingdaowererandomsampledin
differentseasons,wemeasuredandanalyzedthecontentsofheavymetalandthenevaluatedsinglepollution
indexandcomprehensivepollutionindexbythemethodofnationalfoodhygienicstandardofChina,andhealth
riskassessmentfromintakeofvegetablescontainingPbandCdwasassessed.Theresultshowedthattheheavy
metalpollutioninwintervegetablesinQingdaowasmoreseriousthaninspring,andreliedmainlyonthefact
ofCdandPb.ScallionshadthehighestconcentrationofCdandPb,andgarlicreachedthelevelofmoderate
pollution;TheresultsofhealthriskassessmentindicatedthatthePbandCdcontentsofvegetableshasnot
producedtheprominentrisktohealthofcitizensinQingdao.
